Easy and Tasty Slow-Cooked Chick Pea Curry

This is a plant-based, gluten-free curry that takes moments to prepare then you pop on a low flame (or in a slow cooker) and let all the flavours infuse! It is SO good! Hope you like it too:)

In a pan place the following:

1 cup chickpeas (1 can)

two big handfuls spinach

1 cup chopped courgette

1 cup broccoli florets

3 cloves of garlic, finely chopped or minced

1/2 a red onion, finely sliced

2 cups coconut milk

a big pinch of sea salt

juice of half a lemon

1 tsp turmeric

1 tsp Jamaican jerk seasoning (or similar)

1 tsp cumin seens

1 tsp mild curry powder

1 cup cherry tomatoes

 

Method:

No need to do anything else but cook on a low flame for approx 20-30 mins.

I have used no oil in this recipe. Serve with slices of avocado drizzled with lemon/balsamic and a handful of walnuts!
